I learned something new today. I was at USDA for a sign off on some paperwork and the guy there had these cans which at first I thought were a joke, but he assured me they were real and you could still buy them in Mississippi (where he is from), and they are on the menus for breakfast, scrambled eggs and brains. He said the newer cans have the nutritional values and a small can has two servings at 1300% the recommended allowance of cholesterol per serving. Anybody ever try canned pork brains?
